Bok Choy- description and how to store
Super Easy Bok Choy
Ingredients:

bok choy cut into bite sized pieces

1 tablespoon vegetable oil

2 cloves garlic, crushed and chopped

salt to taste

Heat oil in a pan or wok on medium heat. Add garlic and cook until you smell the beautiful aroma then add the bok choy. Cook until the pieces of stalk begin to turn translucent. Remove from heat and salt to taste.

Bok Choy Hash
Ingredients:

2 medium sized potatoes peeled and cut into 1/4 inch slices or however you want them cut

3 Tablespoons oil of choice

1/4 cup or so of chopped onion or shallot

1 bok choy chopped into bite sized pieces

1 chopped jalepeno pepper (optional)
-
1 teaspoon hot sauce (optional but recomended)

salt and pepper to taste

2 eggs

Boil potatoes until almost cooked. Heat 2 tablespoons oil in a pan on medium high heat . Add potatoes and cook,until browning. Add the onion and bok choy. Cooking and tossing and flipping until everything is browning and crisping. Add optional jalapeno and hot sauce, stir in and cook for another minute. Remove hash from heat and put somewhere it will stay warm.
Using the remaining oil, fry the eggs (or scramble them) to your liking (over easy is the obvious choice)
Put eggs on top of hash, salt and pepper to taste. Serve with salsa on the side or add a dollop right on top.
